Alright, so I meant to post this last Friday, but I didn’t get around to it. So the first Food Friday is actually on a Wednesday… Anyway, as a little intro to these food posts, here are three yummy recipes (breakfast, lunch and dinner) for you guys to check out. Enjoy!
- Breakfast
Breakfast – it’s the most important meal of the day. So start it off right with Southern Souffle’s Brown Rice Cereal Bars. These bars are an excellent alternative to store bought ones and are easily customizable. The recipe calls for 1 cup of pecans, but those can easily but substituted for raisins (for those with nut allergies) or you can use alternative nuts. Also, what I like about this recipe is you’re likely to have most the ingredients on hand already (butter, brown sugar, salt, etc). So these bars are a healthy alternative that don’t break the bank.
- Lunch
For lunch, check out No Gojis, No Glory’s Thai Grilled Chicken Salad with Almond Butter Dressing. This hearty salad is homemade from the salad dressing to the chicken marinade, Christine’s got you covered. The recipe is for 4-6 servings, so I can see this being a delicious everyday work lunch meal. The protein from the chicken makes it filling and the salad bed helps add much needed nutrients.
- Dinner
Yum, dinner time. For you guys, I found Jessica in the Kitchen’s One Pot Skinny Alfredo Penne Pasta. With five minutes of prep and twenty minutes cooking time, this is the perfect hearty after-work meal. I’m sure looking at the image you guys are wondering how you something can have such beautifully creamy alfredo and be health-conscious at the same time. Well click the link and check it out!
